2#’s 7oz Milk, whole , (microwave for 3 minutes on high)
111 grams Oil, vegetable
Preparation:
Combine the flours, yeast and sugar.
Add the salt, milk and oil and mix in a Kitchen Aide mixer with a dough hook on low for 4 minutes and medium for 3 minutes, until elastic and fully incorporatedFerment until nearly doubled, about 1 hour.
Fold in half and let rest covered for 20 minutes.
Dived into 2 equal portions (about 3# 4oz each) and form rounds. Let rest covered for 20 minutes.
Stretch into a 12” rectangle and fold the top down to the middle and the bottom up to the middle then fold in half lengthwise making sure all of the seams are sealed and let the dough rest covered for 20 minutes.

Stretch into a 16” rectangle and roll into a tight cylinder. Place the dough into the greased Pullman pans and cover.
Allow the dough to rise to the top of the pans and score down the middle with a razor blade make a ½” incision (optional).
Bake at 400° degrees for 30 to 35 minutes (until the top is nice and brown).
Remove from the pans and allow to fully cool on racks
